Frollemente has made some delicious mini focaccias to accompany our exquisite patés inspired by traditional Tuscan recipes. An indulgent aperitivo that provides an exciting break from simple flavours when accompanied by a glass of Terre di Pranzano.
500 g flour
5 g brewer’s yeast
280 g water
30 g extra virgin olive oil
10 g salt
- In the bowl of a stand mixer, add the flour, and the yeast dissolved in water. Start mixing and kneading. When the dough is uniform, add the oil and salt. It is ready when it easily comes away from the bowl. Turn it out onto a pastry board.
- Let the dough rise until it has doubled in volume. Form small 40 g loaves, place them on a well-oiled baking sheet and leave them to rise again.
- After the second rising, press the loaves gently with your fingers to flatten them slightly, brush them with the olive oil and sprinkle with a few grains of coarse salt.
- Bake in an oven preheated to 200°C for about 15–20 minutes or until golden.
A tasty suggestion
Are you planning a simple aperitivo with friends?
Impress your guests with the intense flavour of the “Tuscan crostino”, a succulent chicken liver paté, ideal to spread on thin slices of warm bread, focaccia or schiacciata.
For a vegetarian option, we suggest trying the black olive patè or artichoke cream: two fresh,
delicately flavoured sauces that bring aromatic notes of the Tuscan countryside to your table.
If you prefer to tantalise your palate with a pleasant play of textures, we suggest you try the focaccias with our artichoke hearts in oil. And lastly, if you love intense, deep flavours, try the focaccias and crostini with our truffle sauce.
Perfect with a red
A glass of Terre di Prenzano, our fruity, lively Chianti Classico, is the perfect accompaniment for the intense, deep flavours of the traditional Tuscan aperitivo created with focaccia, crostini or schiacciata.
