REFRESHING APERITIF

Our chef Cristina knows how to take care of our guests and in the meanwhile, save them from the heat wave of this summer.
Three little, simple, colorful ideas for a Summer sneak.

For 10/15 people (depending on your thirst)

APERITIVO ALBALUCE

Preparation: 15 min. + 1 hour for chilling

WHAT DO YOU NEED
Sugar 50g
Wine Rosé Albaluce 500 ml
5 gelatine leaves (Vegan trick: you can try it with Agar Agar)
Fresh fruit (you can choose the fruit you like most: we chose raspberries, blueberries, strawberries and melon)


HOW TO DO IT
1. Put the gelatine leaves into a bowl with cold water, to get them soft.
2. In the meantime put Albaluce Rosé wine with the sugar into a small pot and bring it to the boil. (remember to mix it thoroughly)

3. The sugar is melted into the wine, we can switch off the fire. Now, we put our gelatine leaves  into it and let it chill out.
4. While our mixture get chill, we can slice the fruit into chunks and place it on the bottom of little, transparent glasses.
5. We fill the glasses with our Albaluce mixture, covering the fruit and put them in the fridge for one hour, at least.
6. During this hour we can do whatever we want to: read a book, quaff our Rosé bottle or just look at the fridge waiting eagerly  for the final result.


WATERMELON SHOT

Preparation: 5 min. + 1 hour chilling.

WHAT DO WE NEED
watermelon 1
caprino/ goat’s cheese 200g


HOW TO DO IT
1. Peel the watermelon and slice it into chunks using a sharp knife.
2. Afterwards, we cut the cheese in tiny slices and place one of each on the bottom of our glasses.
3. We place the watermelon in a blender: we’ll blend well until the juice is smooth and then strain it to remove the      pulp. Now we can fill the glasses with this fresh watermelon juice, covering the cheese.

4. The loveliest moment of our recipe is coming: we can turn off the blender, put everything in the fridge and take a nap for one hour.

5. Our fresh watermelon’s shot is ready to be eaten! Don’t forget the teaspoon.


FRUIT’  SKEWERS?

Maybe some fruit is left and if it’s enough, you could use it to do some fruit’s skewers, arranging them into a high crystal bowl or a cocktail glass.

You just need to slice the watermelon or the melon into chunks, adding some berries and thread them onto each wooden skewer…which we will barely find at home; don’t panic, we can always  opt for a timeless evergreen: a fruit’s salad.
A hint of pressed organge juice, a bit of lemon juice, some sugar and our refreshing aperitif is ready!
